Ingredients
  

  • 500 g all-purpose flour
  • 70 g granulated sugar
  • 10 g salt
  • 10 g instant yeast
  • 4 large eggs
  • 100 g unsalted butter, softened
  • 150 ml whole milk, warm
  • Zest of 2 lemons
  • 30 ml lemon juice
  • 50 g Glaze: powdered sugar mixed with lemon juice optional
  • Extra lemon zest for garnish optional

Method
 

  1. In a large mixing bowl, combine the flour, sugar, salt, and instant yeast. Mix well.
  2. In a separate bowl, whisk together the eggs, warm milk, lemon zest, and lemon juice.
  3. Pour the wet ingredients into the dry mixture and stir until a rough dough forms.
  4. Add softened butter and knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.
  5. Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise in a warm area for 1 hour, or until doubled in size.
  6. Once risen, punch down the dough and roll it out into a rectangle, approximately 1 cm thick.
  7. Cut the dough into equal squares, about 10 cm each, and roll each square into a ball.
  8. Arrange the balls on a lined baking tray, allowing enough space for them to rise and expand.
  9. Cover loosely with a towel and let them rise for another 30 minutes.
  10. Preheat the oven to 180°C (350°F).
  11. Bake the brioche rolls for 15-20 minutes or until golden brown on top.
  12. For the glaze, whisk together powdered sugar and lemon juice until smooth. Drizzle over the warm rolls and garnish with extra lemon zest if desired.
