Ingredients

  • 200 g dark chocolate (at least 70% cocoa), chopped
  • 3 large eggs, separated
  • 80 g granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 200 ml heavy cream
  • 50 g coconut flakes, toasted
  • A pinch of sea salt for garnish optional
  • Fresh mint leaves for decoration optional

Equipment

  • Mixing bowls
  • Electric mixer or whisk
  • Double boiler or heatproof bowl over simmering water
  • Rubber spatula
  • Serving cups or ramekins

Method

  1. In a double boiler, melt the dark chocolate over simmering water until smooth. Remove from heat and set aside to cool slightly.
  2. In a mixing bowl, whisk the egg yolks and sugar until pale and creamy. Stir in the vanilla, cinnamon, and nutmeg.
  3. Slowly add the melted chocolate to the egg yolk mixture, stirring continuously until well combined.
  4. In another bowl, beat the heavy cream until soft peaks form, then gently fold it into the chocolate mixture using a rubber spatula.
  5. In a separate clean bowl, beat the egg whites until stiff peaks form. Carefully fold the egg whites into the chocolate mixture, ensuring a light and airy texture.
  6. Spoon the mousse into serving cups, tapping them gently to remove air bubbles.
  7. Cover and refrigerate for at least 2 hours to set.
  8. Before serving, top each mousse cup with toasted coconut flakes and a pinch of sea salt. Optionally, garnish with fresh mint leaves.

Notes

Feel free to customize the spices according to your preference—add a dash of cayenne pepper for a hint of heat, or use orange zest for a citrusy twist! If you’re looking for a lighter version, consider substituting half of the heavy cream with Greek yogurt. This mousse can be stored in the refrigerator for up to 3 days, but it’s best enjoyed fresh. Reaching for your favorite high-quality chocolate will elevate the overall flavor of this delightful dessert!
