Ingredients
  

  • 200 g all-purpose flour
  • 100 g unsalted butter, softened
  • 150 g granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 100 g fruit jam (any preferred flavor for topping)
  • Powdered sugar for garnish optional
  • Chopped nuts (e.g. walnuts or pecans) optional

Method
 

  1. Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract to the mixture, and mix until well combined.
  4. In another bowl, whisk together the all-purpose flour, ground cinnamon, nutmeg, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
  6. Use a cookie scoop or spoon to drop rounded tablespoons of dough onto the prepared baking tray, leaving space between each cookie.
  7. Bake for 10-12 minutes or until the edges are lightly golden. The centers should be set but still soft to the touch.
  8. Allow the cookies to cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, spread a generous layer of your chosen fruit jam on top of each cookie. Sprinkle with powdered sugar and chopped nuts if desired.

Notes

For a lower sugar version, feel free to substitute the granulated sugar with coconut sugar or a sugar alternative.
