- Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the mixture, and mix until well combined.
- In another bowl, whisk together the all-purpose flour, ground cinnamon, nutmeg, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
- Use a cookie scoop or spoon to drop rounded tablespoons of dough onto the prepared baking tray, leaving space between each cookie.
- Bake for 10-12 minutes or until the edges are lightly golden. The centers should be set but still soft to the touch.
- Allow the cookies to cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.
- Once cooled, spread a generous layer of your chosen fruit jam on top of each cookie. Sprinkle with powdered sugar and chopped nuts if desired.

For a lower sugar version, feel free to substitute the granulated sugar with coconut sugar or a sugar alternative.
