Ingredients
  

  • 500 g all-purpose flour
  • 10 g instant yeast
  • 50 g granulated sugar
  • 10 g salt
  • 300 ml whole milk
  • 100 g unsalted butter, softened
  • 50 g espresso or strong brewed coffee, cooled
  • 5 g ground cinnamon
  • 2 g ground nutmeg
  • 1 large egg (for egg wash)
  • Fruit jam of choice (e.g., raspberry, apricot, or fig) optional
  • Powdered sugar for dusting optional

Method
 

  1. In a mixing bowl, combine the flour, instant yeast, sugar, salt, ground cinnamon, and ground nutmeg.
  2. Gently heat the milk until warm (about 37°C / 98°F) and mix in the cooled coffee. Pour the mixture into the dry ingredients and knead until a smooth dough forms.
  3. Incorporate the softened butter into the dough, kneading until well blended and elastic (about 5-7 minutes).
  4. Place the dough in a lightly greased bowl, cover with a clean cloth, and let it rise in a warm place until doubled in size (approximately 30 minutes).
  5. Once risen, roll the dough out on a floured surface to about 1 cm thickness. Fold it in thirds (like a letter) and refrigerate for 15 minutes to chill.
  6. Roll out the dough again into a rectangle, and fold in thirds once more. Chill for another 15 minutes.
  7. Finally, roll out the dough into a large rectangle, and cut triangles (10 cm base). Starting from the base, roll each triangle into a crescent shape.
  8. Place the shaped croissants on a parchment-lined baking tray, and brush the tops with the egg wash. Allow to proof for another 30 minutes or until puffy.
  9. Preheat the oven to 200°C (400°F). Bake the croissants for 15-20 minutes until golden brown and flaky. Keep an eye on them to ensure they don't over-bake.
  10. Remove from the oven and let cool on a wire rack. Serve with your preferred fruit jam and dust with powdered sugar for presentation.
