Ingredients

  • 300 g sweetened condensed milk
  • 200 g honey
  • 100 g unsalted butter
  • 300 g powdered sugar
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp nutmeg
  • 150 g unsweetened shredded coconut
  • A pinch of sea salt optional
  • Additional spices like cardamom optional

Equipment

  • Medium saucepan
  • whisk
  • Baking dish or pan (20x20 cm)
  • Parchment paper (optional, for easy removal)
  • Candy thermometer

Method

  1. Prepare your baking dish by lining it with parchment paper, allowing some overhang for easy removal later.
  2. In a medium saucepan, combine the sweetened condensed milk, honey, and butter. Heat over medium-low, whisking continuously until the butter fully melts and the mixture is smooth.
  3. Increase the heat slightly and bring the mixture to a gentle boil, stirring frequently. Continue to cook for about 5-7 minutes, or until it thickens slightly. (Use a candy thermometer if you have one; it should reach about 115°C / 240°F.)
  4. Remove from heat and immediately whisk in the powdered sugar and spices until well combined. The mixture will be thick.
  5. Pour the fudge mixture into the prepared baking dish, spreading it evenly into the corners.
  6. Top the fudge with shredded coconut, pressing down gently to ensure it sticks.
  7. Allow the fudge to cool at room temperature for about 2 hours. Once set, cut into neat squares.
  8. Serve as is or with a sprinkle of additional coconut for an elegant touch.
