Spicy Johannesburg Pap and Relish with Rice

- In a saucepan, bring 500 ml of water to a boil. Add the rice and a pinch of salt. Cover and reduce heat to low, simmering for 15-20 minutes until the rice is tender and the water is absorbed. Remove from heat and let it rest.
- In a large pot, bring 1 liter of water to a rolling boil. Gradually whisk in the maize meal, stirring continuously to avoid lumps. Cook over low heat for about 10-15 minutes, stirring often, until the pap is thick and creamy.
- In a separate pan, heat the vegetable oil over medium heat. Add the chopped onion and sauté for 5 minutes until translucent. Stir in the minced garlic and grated ginger, cooking for another minute.
- Mix in the canned tomatoes, chopped bell pepper, chili powder, and salt. Let it simmer on low heat for 10-15 minutes, allowing the flavors to blend, until the sauce thickens slightly.
- Spoon the pap onto plates, top with the spicy relish, and serve alongside the rice. Garnish with fresh coriander and optional toppings like sliced avocado or chopped spring onions.
