Ingredients
  

  • 250 g maize meal
  • 1 liter water
  • 200 g long-grain rice
  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 400 g canned diced tomatoes
  • 1 green bell pepper, chopped
  • 2 tablespoons chili powder

Method
 

  1. In a saucepan, bring 500 ml of water to a boil. Add the rice and a pinch of salt. Cover and reduce heat to low, simmering for 15-20 minutes until the rice is tender and the water is absorbed. Remove from heat and let it rest.
  2. In a large pot, bring 1 liter of water to a rolling boil. Gradually whisk in the maize meal, stirring continuously to avoid lumps. Cook over low heat for about 10-15 minutes, stirring often, until the pap is thick and creamy.
  3. In a separate pan, heat the vegetable oil over medium heat. Add the chopped onion and sauté for 5 minutes until translucent. Stir in the minced garlic and grated ginger, cooking for another minute.
  4. Mix in the canned tomatoes, chopped bell pepper, chili powder, and salt. Let it simmer on low heat for 10-15 minutes, allowing the flavors to blend, until the sauce thickens slightly.
  5. Spoon the pap onto plates, top with the spicy relish, and serve alongside the rice. Garnish with fresh coriander and optional toppings like sliced avocado or chopped spring onions.
