Sweet Potato and Lentils Baby Meal

- In a pot, combine the diced sweet potato, rinsed lentils, and vegetable broth. Bring to a boil over medium heat, then reduce to a simmer.
- Cover and cook for about 20-25 minutes, or until both the sweet potatoes and lentils are very soft, stirring occasionally.
- Once cooked, remove from heat and let it rest for 5 minutes.
- Using a blender or food processor, blend until desired smoothness is achieved. For a thicker texture, blend less.
- If desired, stir in olive oil and a pinch of cinnamon for extra flavor.
- Allow to cool to a safe temperature before serving to your baby.

If your little one is ready for a bit of variety, try adding finely chopped spinach or other soft vegetables.
Store any leftovers in an airtight container in the fridge for up to 3 days or freeze portions for later use.
Reheat gently on the stove or in the microwave, adding a little water if needed to smoothen the texture.
