Ingredients
  

  • 200 g sweet potato
  • 100 g red lentils
  • 500 ml vegetable broth
  • 1 tablespoon olive oil
  • a pinch of cinnamon optional
  • a small handful of cooked spinach optional

  • Blanching pot (for broccoli)
  • Large mixing bowl
  • Blender or food processor
  • Measuring cups and spoons
  • Wooden spoon

Method
 

  1. In a pot, combine the diced sweet potato, rinsed lentils, and vegetable broth. Bring to a boil over medium heat, then reduce to a simmer.
  2. Cover and cook for about 20-25 minutes, or until both the sweet potatoes and lentils are very soft, stirring occasionally.
  3. Once cooked, remove from heat and let it rest for 5 minutes.
  4. Using a blender or food processor, blend until desired smoothness is achieved. For a thicker texture, blend less.
  5. If desired, stir in olive oil and a pinch of cinnamon for extra flavor.
  6. Allow to cool to a safe temperature before serving to your baby.
