  • 30 ml fresh lemon juice
  • 20 g honey (or maple syrup for vegan option)
  • Zest of 1 lemon
  • 1/4 tsp salt
  • Chopped fresh mint or basil for garnish optional
  • A sprinkle of toasted sesame seeds optional

Method
 

  1. In a mixing bowl, combine the Greek yogurt, tahini, lemon juice, honey, lemon zest, and salt. Use a whisk or fork to mix until smooth and creamy.
  2. Taste and adjust the sweetness or tartness by adding more honey or lemon juice according to your preference.
  3. Spoon the mixture into a cup muffin tray or individual ramekins, leveling them off for an even surface.
  4. Cover with plastic wrap or a lid, and place in the refrigerator for at least 20 minutes to chill and set.
  5. When ready to serve, remove from the fridge, and if desired, garnish with fresh herbs and a sprinkle of toasted sesame seeds.
