Ingredients

  • 200 g ground turkey
  • 100 g quinoa
  • 500 ml low-sodium chicken broth
  • 70 g medium carrot, diced
  • 100 g small zucchini, diced
  • 1 tablespoon olive oil
  • 5 g dried thyme
  • 10 g grated cheese optional
  • fresh herbs like parsley or basil optional

Equipment

  • Medium pot
  • Chef's knife
  • Cutting board
  • Mixing spoon
  • Measuring cups and spoons

Method

  1. In a medium pot, heat the olive oil over medium heat. Add the ground turkey and cook until browned, about 5-7 minutes. Break it apart with a mixing spoon as it cooks.
  2. Add the diced carrot and zucchini to the pot, stirring for another 3-4 minutes until they start to soften.
  3. Rinse the quinoa under cold water and then add it to the pot along with the chicken broth and dried thyme.
  4. Bring the mixture to a gentle boil, then reduce the heat to low, covering the pot. Let it simmer for about 15-20 minutes, or until the quinoa is fluffy and the vegetables are tender.
  5. Allow the mixture to rest off the heat for 5 minutes. Before serving, mix everything together, ensuring a soft and even texture.
  6. Optionally, sprinkle with cheese or fresh herbs before portioning it into small bowls for your little one.
