- In a mixing bowl, combine the ground beef, 2 tablespoons of olive oil, za'atar spice, salt, and pepper. Mix thoroughly until evenly combined.
- Heat a large skillet over medium heat. Once hot, add the seasoned ground beef. Cook for about 5-7 minutes, breaking it apart with a spatula until browned and cooked through.
- While the beef is cooking, prepare the cabbage and cucumber. Place the sliced cabbage and cucumber in a bowl and toss with the remaining olive oil, salt, and pepper to taste.
- After the beef is done, remove it from heat and let it rest for 5 minutes.
- Cut the pita breads in half to create pockets. Fill each pocket with a generous amount of the beef mixture, followed by the cabbage and cucumber salad.
- If desired, top the sandwiches with crumbled feta cheese and a sprinkle of sesame seeds. Serve the sandwiches warm, cut in half for a beautiful presentation.
