Zesty Cardamom Doughnut with Chocolate Chips

- In a large mixing bowl, whisk together the flour, sugar, cardamom powder, baking powder, and salt until well combined.
- In a separate bowl, beat the eggs and then mix in the milk and melted butter.
- Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Fold in the chocolate chips.
- Allow the dough to rest for 30 minutes, covered with a clean cloth.
- Heat the oil in a deep fryer or large pot to 180°C (350°F).
- Roll out the dough to about 1.5 cm thick and use a doughnut cutter to shape the doughnuts.
- Fry the doughnuts in batches, about 2-3 minutes on each side or until golden brown and cooked through.
- Place the fried doughnuts onto a cooling rack to drain excess oil.
- Dust with icing sugar or sprinkle more chocolate chips if desired, and serve warm or at room temperature.
