Ingredients
  

  • 500 g all-purpose flour
  • 100 g sugar
  • 1 tsp cardamom powder
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 200 ml milk
  • 50 g unsalted butter, melted
  • 150 g chocolate chips
  • (optional) Icing sugar for dusting optional
  • (optional) Extra chocolate chips for garnish optional

Method
 

  1. In a large mixing bowl, whisk together the flour, sugar, cardamom powder, baking powder, and salt until well combined.
  2. In a separate bowl, beat the eggs and then mix in the milk and melted butter.
  3. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Fold in the chocolate chips.
  4. Allow the dough to rest for 30 minutes, covered with a clean cloth.
  5. Heat the oil in a deep fryer or large pot to 180°C (350°F).
  6. Roll out the dough to about 1.5 cm thick and use a doughnut cutter to shape the doughnuts.
  7. Fry the doughnuts in batches, about 2-3 minutes on each side or until golden brown and cooked through.
  8. Place the fried doughnuts onto a cooling rack to drain excess oil.
  9. Dust with icing sugar or sprinkle more chocolate chips if desired, and serve warm or at room temperature.
