- In a food processor, combine the pitted dates, ground almonds, lemon zest, and lemon juice. Blend until the mixture is well-combined and sticky.
- Transfer the mixture to a mixing bowl, and using your hands, form the mixture into small bite-sized balls (about 2.5 cm in diameter).
- Roll each ball in coconut flakes to coat evenly. If desired, also roll in chopped pistachios for added flavor.
- Place the coated candy bites on a baking tray lined with parchment paper.
- Refrigerate for about 30 minutes to allow them to firm up.
