Ingredients

  • 300 g Medjool dates, pitted
  • 100 g unsweetened shredded coconut, plus extra for coating
  • 50 g almond flour
  • Zest of 2 large lemons
  • 30 ml fresh lemon juice
  • 1 tsp vanilla extract
  • Pinch of salt
  • Toasted nuts (e.g. walnuts, hazelnuts) for extra crunch optional
  • Dark chocolate drizzle for a richer flavor optional

Equipment

  • Heatproof mixing bowl
  • Blender or food processor
  • Baking sheet
  • Baking sheet lined with parchment paper

Method

  1. Begin by placing the pitted dates in a food processor. Pulse them until they form a sticky paste.
  2. To the date paste, add the almond flour, coconut, lemon zest, lemon juice, vanilla extract, and a pinch of salt. Blend until combined, scraping down the sides as needed.
  3. Once mixed, you should have a thick, dough-like consistency. If it’s too sticky, add a bit more almond flour.
  4. Line a baking sheet with parchment paper. With your hands slightly dampened, take small portions of the mixture and roll them into bite-sized balls or squares.
  5. Roll each piece in the remaining shredded coconut until fully coated.
  6. Place the candy bites on the lined baking sheet and refrigerate for about 30 minutes to firm up.
  7. Enjoy chilled or at room temperature!

Notes

Feel free to substitute Medjool dates with other large, sweet varieties if needed, but be sure they are pitted.
Experiment with different flavors by adding in nuts or spices like cinnamon for a unique twist.
These bites can be stored in an airtight container in the fridge for up to one week. They also freeze well—just let them thaw before serving!
For a special treat, drizzle with melted dark chocolate—it's a luxurious touch that pairs wonderfully with the zesty lemon flavor. Enjoy your creation!
