- In a food processor, combine the pitted Medjool dates, almond flour, lemon zest, lemon juice, and vanilla extract. Blend until a sticky, smooth dough forms. This should take about 1-2 minutes.
- If using, mix in the chopped nuts until evenly distributed throughout the dough.
- Line a baking tray with parchment paper.
- Scoop out about 1 tablespoon of the mixture and roll it into a small ball. Repeat this process until all the mixture is used, placing each ball on the prepared tray.
- Roll each ball in shredded coconut to coat evenly, then place back on the tray.
- Once shaped and coated, let the candy bites rest in the refrigerator for at least 30 minutes to firm up.
- Serve chilled or at room temperature and garnish with additional lemon zest if desired. Enjoy!
