Method
 

  1. In a food processor, combine the pitted Medjool dates, almond flour, lemon zest, lemon juice, and vanilla extract. Blend until a sticky, smooth dough forms. This should take about 1-2 minutes.
  2. If using, mix in the chopped nuts until evenly distributed throughout the dough.
  3. Line a baking tray with parchment paper.
  4. Scoop out about 1 tablespoon of the mixture and roll it into a small ball. Repeat this process until all the mixture is used, placing each ball on the prepared tray.
  5. Roll each ball in shredded coconut to coat evenly, then place back on the tray.
  6. Once shaped and coated, let the candy bites rest in the refrigerator for at least 30 minutes to firm up.
