- Prepare your baking tray by lining it with parchment paper and setting it aside.
- In a large saucepan over medium heat, combine the sugar, butter, corn syrup, and salt. Stir until the mixture is smooth and starts to bubble slightly.
- Continue cooking for about 5–7 minutes, stirring occasionally, until the mixture reaches 120°C (248°F) on a candy thermometer, or until a firm ball forms when dropped in cold water.
- Remove from heat, and quickly stir in the toasted sesame seeds, vanilla extract, and half of the freeze-dried berries. Mix until well combined.
- Pour the mixture onto the prepared baking tray and spread it out to a uniform thickness, approximately 1 cm.
- Allow the brittle to cool and set at room temperature for about 30 minutes.
- Once cooled, use a sharp knife to cut the brittle into neat pieces.
- Decorate each piece with the remaining freeze-dried berries and a light dusting of powdered sugar, if desired.
