Ingredients
  

  • 150 g toasted sesame seeds
  • 100 g granulated sugar
  • 30 g unsalted butter
  • 75 ml light corn syrup
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 100 g mixed freeze-dried berries (such as strawberries, raspberries, and blueberries)
  • Dusting of powdered sugar for garnish optional
  • Fresh berry slices for decoration optional

Method
 

  1. Prepare your baking tray by lining it with parchment paper and setting it aside.
  2. In a large saucepan over medium heat, combine the sugar, butter, corn syrup, and salt. Stir until the mixture is smooth and starts to bubble slightly.
  3. Continue cooking for about 5–7 minutes, stirring occasionally, until the mixture reaches 120°C (248°F) on a candy thermometer, or until a firm ball forms when dropped in cold water.
  4. Remove from heat, and quickly stir in the toasted sesame seeds, vanilla extract, and half of the freeze-dried berries. Mix until well combined.
  5. Pour the mixture onto the prepared baking tray and spread it out to a uniform thickness, approximately 1 cm.
  6. Allow the brittle to cool and set at room temperature for about 30 minutes.
  7. Once cooled, use a sharp knife to cut the brittle into neat pieces.
  8. Decorate each piece with the remaining freeze-dried berries and a light dusting of powdered sugar, if desired.
