  • 250 g ripe mixed berries (strawberries, blueberries, raspberries)
  • 200 ml brewed coffee, cooled
  • 150 g sugar
  • 120 g almond flour
  • 50 g all-purpose flour
  • 2 large eggs
  • 100 g chocolate chips
  • 1 tsp vanilla extract
  • Fresh mint leaves for garnish optional
  • Additional chocolate chips optional

Method
 

  1. Preheat your oven to 180°C (350°F) and grease the baking dish with a little butter or non-stick spray.
  2. In a mixing bowl, combine the cooled brewed coffee, sugar, and eggs. Whisk until you have a smooth mixture.
  3. Gradually fold in the almond flour and all-purpose flour until well combined, ensuring you eliminate any lumps.
  4. Gently stir in the mixed berries and chocolate chips, being careful not to mash the berries.
  5. Pour the mixture into the greased baking dish and spread it evenly.
  6. Bake for 25 minutes, or until the top is golden and a toothpick inserted comes out clean.
  7. Allow to cool at room temperature for 30 minutes before cutting into desired servings.
  8. Serve garnished with fresh mint leaves and additional chocolate chips if desired.
