- Preheat your oven to 180°C (350°F) and line the baking tray with parchment paper.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add honey and the egg to the mixture and whisk until well combined.
- In a separate bowl, mix the flour, baking powder, and salt. Gradually incorporate this dry mixture into the wet ingredients until just combined.
- Gently fold in the mixed berries until evenly distributed throughout the dough.
- Scoop tablespoons of dough onto the prepared baking tray, spacing them about 5 cm apart.
- Bake in the preheated oven for 15-20 minutes or until the edges are lightly golden and the centers are slightly soft.
- Remove from the oven and let the biscuits rest on the tray for 5 minutes before transferring to a wire rack to cool completely.
