  • 50 g brown sugar
  • 1 large egg
  • 5 g baking powder
  • 2 g salt
  • 100 g mixed berries (e.g., raspberries, blueberries)
  • Icing sugar for dusting optional

Method
 

  1. Preheat your oven to 180°C (350°F) and line the baking tray with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Add honey and the egg to the mixture and whisk until well combined.
  4. In a separate bowl, mix the flour, baking powder, and salt. Gradually incorporate this dry mixture into the wet ingredients until just combined.

  6. Scoop tablespoons of dough onto the prepared baking tray, spacing them about 5 cm apart.

  8. Remove from the oven and let the biscuits rest on the tray for 5 minutes before transferring to a wire rack to cool completely.
