  • 150 g brown sugar
  • 100 g granulated sugar
  • 120 ml vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 50 g chopped walnuts or pecans optional
  • Pinch cinnamon or nutmeg optional

Equipment

  • 8x8 inch baking pan
  • Heatproof mixing bowl
  • Electric mixer (or whisk)
  • Chef's knife

Method

  1. Preheat your oven to 180°C (350°F) and lightly grease the baking pan.
  2. In a mixing bowl, combine the grated carrots, brown sugar, and granulated sugar. Whisk until well incorporated.
  3. Add the eggs, vegetable oil, and vanilla extract to the mixture, stirring until smooth.
  4. In another bowl, sift together the flour, cocoa powder, baking powder, baking soda, salt, and optional spices.
  5. Gradually combine the dry ingredients with the wet mixture, stirring until just blended. Avoid overmixing for the best fudgy texture.
  6. If desired, fold in the chopped nuts.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake in the preheated oven for 25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  9. Allow the bars to cool in the pan for about 30 minutes before transferring them to a cutting board for slicing.
  10. Drizzle with date caramel before serving for an extra touch of sweetness (optional).

Notes

Feel free to substitute the brown sugar with coconut sugar for a lighter flavor, or swap in whole wheat flour for a bit more fiber.
These bars store well in an airtight container in the fridge for up to a week, making them a convenient treat to grab on the go.
When reheating, gently warm them in a microwave to maintain their fudgy texture.
