Ingredients

  • 500 g all-purpose flour
  • 50 ml vegetable oil
  • 200 ml warm water
  • 1/2 tsp salt
  • 700 g tart apples (like Granny Smith), peeled and sliced
  • 100 g granulated sugar
  • 1 tsp ground cinnamon
  • 50 g breadcrumbs
  • 100 g unsalted butter, melted
  • 2 tbsp honey
  • Powdered sugar for dusting optional
  • Whipped cream for serving optional

Equipment

  • Heatproof mixing bowl
  • Food processor or plastic bag & rolling pin (for biscuits)
  • Baking tray
  • Chef's knife
  • Pastry brush
  • Cling film/Plastic wrap

Method

  1. In a mixing bowl, combine flour and salt. Gradually add warm water and oil, mixing until a smooth dough forms. Cover with cling film and let it rest for 15 minutes.
  2. Meanwhile, in another bowl, mix the sliced apples with sugar and cinnamon. Set aside.
  3. Preheat your oven to 190°C (375°F) and line a baking tray with parchment paper.
  4. Roll out the rested dough on a floured surface until very thin, about 1-2 mm thick. Ensure the edges are thinner than the center for an even bake.
  5. Spread the breadcrumbs evenly over the dough, leaving a border around the edges. This will help absorb moisture from the apples.
  6. Layer the apple mixture over the breadcrumbs, then carefully roll the dough away from you into a tight log, sealing the ends.
  7. Place the strudel seam-side down on the baking tray. Brush the top generously with melted butter.
  8. Bake for 30-40 minutes, or until the strudel is golden brown and crispy. Allow to cool slightly.
  9. Drizzle with honey before slicing into portions. Optionally dust with powdered sugar and serve with a dollop of whipped cream.

You can also swap out sugar for alternative sweeteners or add a sprinkle of nuts to the filling for extra crunch. If you have leftovers, store them in an airtight container in the fridge for up to 3 days. Reheat in the oven for a few minutes to revive that lovely crispiness! Happy baking!
