  • 100 g 100 g fresh spinach, chopped
  • 75 g 75 g feta cheese, crumbled
  • 1 tbsp 1 tbsp harissa paste
  • 1 tbsp 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tbsp 1 tbsp sesame seeds (for garnish)
  • Fresh cucumber, sliced (for serving) optional
  • Cherry tomatoes, halved (for serving) optional

Method
 

  1. In a mixing bowl, whisk together the eggs, harissa paste, salt, and pepper until well combined.
  2. Heat the olive oil in a non-stick frying pan over medium heat.
  3. Once the oil is hot, add the chopped spinach and sauté for 2-3 minutes until wilted.
  4. Pour the egg mixture into the pan with the spinach, stirring gently with a spatula.
  5. Cook for about 4-6 minutes, stirring occasionally, until the eggs are just set but still fluffy and slightly runny.
  6. Fold in the crumbled feta cheese and remove from heat; the residual heat will finish cooking the eggs.
  7. Serve the scramble hot, garnished with sesame seeds, alongside fresh cucumber slices or cherry tomatoes.
