Ingredients
  

  • 500 g 500 g ground beef or lamb
  • 1 1 onion, finely chopped (about 150 g)
  • 2 2 cloves garlic, minced
  • 1 tbsp 1 tbsp curry powder
  • 1 tsp 1 tsp turmeric
  • 2 slices 2 slices white bread, crusts removed
  • 250 ml 250 ml milk
  • 2 2 large eggs
  • 2 tbsp 2 tbsp apricot jam
  • 1 tbsp 1 tbsp Worcestershire sauce
  • 1 tbsp 1 tbsp vinegar
  • Salt and pepper to taste
  • 3 3 medium ripe tomatoes, sliced
  • Fresh coriander for garnish optional
  • Chutney, for serving optional

Equipment

  • Heatproof mixing bowl
  • Baking dish (approximately 2 liters capacity)
  • Deep frying pan or pot
  • Chef's knife
  • Measuring cups and spoons

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. In a frying pan over medium heat, sauté the chopped onion and garlic until softened and translucent.
  3. Add the ground beef or lamb to the pan, cooking until browned. Stir in the curry powder and turmeric, allowing the spices to bloom for about 2 minutes.
  4. In a mixing bowl, soak the bread in milk until softened, then mash it into a paste.
  5. Combine the mashed bread with the cooked meat mixture, along with eggs, apricot jam, Worcestershire sauce, vinegar, salt, and pepper. Mix until fully integrated.
  6. Transfer the mixture to a greased baking dish, smoothing the top.
  7. Arrange the sliced tomatoes over the top of the bobotie.
  8. Bake in the preheated oven for approximately 50 minutes or until the top is golden brown and set.
  9. Remove from the oven and let it rest for 10 minutes before serving.
