Ingredients

  • 800 g beef steak (or chicken, for a lighter option)
  • 2 tbsp vegetable oil
  • 2 tsp paprika
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tsp garlic powder
  • 200 g mixed bell peppers, sliced
  • 200 g onions, sliced
  • 300 g all-purpose flour
  • 1 tsp salt
  • 200 ml warm water
  • 2 tbsp olive oil
  • Sliced avocado optional
  • Chopped fresh coriander optional
  • Fresh lime wedges optional

Equipment

  • Grill or grill pan
  • Chef's knife
  • Heatproof mixing bowl
  • Food processor or plastic bag & rolling pin (for biscuits)
  • Flatbread pan (e.g., tawa or cast iron skillet)

Method

  1. In a mixing bowl, whisk together vegetable oil, paprika, black pepper, salt, and garlic powder. Add the beef steak (or chicken) and marinate for at least 20 minutes.
  2. In another bowl, combine flour and salt. Gradually add warm water and knead until a soft dough forms. Add olive oil and knead for another 5 minutes until smooth. Cover and let it rest for 10 minutes.
  3. While the dough is resting, heat your grill or grill pan over medium-high heat.
  4. Grill the marinated meat for about 5-7 minutes per side or until it reaches your desired doneness (for chicken, ensure it is fully cooked at 75°C / 165°F). Allow to rest for 5 minutes before slicing.
  5. Divide the dough into four equal portions. Roll each portion into a circle about 1/4 inch thick. Cook each flatbread on the grill or in a pan for 2-3 minutes on each side until lightly browned.
  6. In the same grill pan, toss the sliced bell peppers and onions. Grill for 3-4 minutes until tender and slightly charred.
  7. Slice the grilled meat and arrange it on a plate alongside the flatbread, sautéed vegetables, and any optional toppings you desire.
