- Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy using a whisk or electric mixer (about 2-3 minutes).
- Beat in the egg and vanilla extract until combined.
- In another bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined. If using, fold in the chocolate chips.
- Drop tablespoon-sized balls of dough onto the prepared baking tray, spacing them about 5 cm apart.
- Sprinkle coconut flakes over the tops of each cookie dough ball before baking.
- Bake in the preheated oven for 10-12 minutes, until the edges are firm but the centers remain slightly soft.
- Allow the cookies to rest on the tray for 5 minutes before transferring them to a wire rack to cool completely.
