Method
 

  1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy using a whisk or electric mixer (about 2-3 minutes).
  3. Beat in the egg and vanilla extract until combined.
  4. In another bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined. If using, fold in the chocolate chips.
  6. Drop tablespoon-sized balls of dough onto the prepared baking tray, spacing them about 5 cm apart.
  7. Sprinkle coconut flakes over the tops of each cookie dough ball before baking.
  8. Bake in the preheated oven for 10-12 minutes, until the edges are firm but the centers remain slightly soft.
  9. Allow the cookies to rest on the tray for 5 minutes before transferring them to a wire rack to cool completely.
