- In a mixing bowl, combine the pitted Medjool dates, rolled oats, lemon juice, lemon zest, chopped almonds, shredded coconut, and sea salt.
- Using a food processor, pulse the mixture until it becomes a sticky, cohesive dough, scraping the sides as needed. The mixture should hold together when pressed.
- Once the mixture is ready, wet your hands slightly to prevent sticking, and scoop portions of the mixture (about 1 tablespoon each). Roll them into balls.
- Roll each ball in extra shredded coconut to coat them evenly.
