- Place the pitted Medjool dates in a food processor and blend until they form a smooth paste. You may need to scrape down the sides a few times.
- In a mixing bowl, combine the date paste, lemon juice, lemon zest, rolled oats, and almond flour. Stir until well mixed. If desired, fold in chopped walnuts or pecans at this stage.
- Refrigerate the mixture for 15-30 minutes to allow it to firm up, making it easier to shape.
- Once chilled, take a small amount of the mixture and roll it into bite-sized balls.
- Roll each ball in the unsweetened coconut flakes until fully coated. Place them on a parchment-lined baking tray.
- Once all the bites are rolled and coated, refrigerate for an additional 30 minutes to set.
- Serve chilled, garnished with extra coconut flakes if desired.
