Ingredients
  

  • 200 g Medjool dates, pitted
  • 2 tbsp lemon juice (freshly squeezed)
  • Zest of 1 lemon
  • 100 g rolled oats
  • 50 g almond flour
  • 50 g unsweetened coconut flakes (for coating)
  • 30 g chopped walnuts or pecans optional
  • Extra coconut flakes for garnish optional

  • Heatproof mixing bowl
  • Blender or food processor
  • 20 cm (8 inch) square baking tray
  • Baking tray lined with parchment paper
  • Measuring spoons

Method
 

  1. Place the pitted Medjool dates in a food processor and blend until they form a smooth paste. You may need to scrape down the sides a few times.
  2. In a mixing bowl, combine the date paste, lemon juice, lemon zest, rolled oats, and almond flour. Stir until well mixed. If desired, fold in chopped walnuts or pecans at this stage.
  3. Refrigerate the mixture for 15-30 minutes to allow it to firm up, making it easier to shape.
  4. Once chilled, take a small amount of the mixture and roll it into bite-sized balls.
  5. Roll each ball in the unsweetened coconut flakes until fully coated. Place them on a parchment-lined baking tray.
  6. Once all the bites are rolled and coated, refrigerate for an additional 30 minutes to set.
  7. Serve chilled, garnished with extra coconut flakes if desired.
