  • 200 g pitted dates
  • 100 g sesame seeds
  • 50 g rolled oats
  • 50 g almond flour
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 100 g mixed fresh berries (strawberries, blueberries, raspberries) optional
  • toasted sesame seeds for garnish optional

  • Heatproof mixing bowl
  • Blender or food processor
  • Baking dish (20x20 cm)
  • Baking tray lined with parchment paper

Method
 

  1. In a food processor, combine the pitted dates, sesame seeds, rolled oats, almond flour, melted coconut oil, vanilla extract, and salt. Pulse until the mixture becomes sticky and crumbly.
  2. Line a baking dish with parchment paper, allowing some overhang for easy removal.
  3. Press the mixture firmly into the lined dish using a spatula or your hands, making sure it’s evenly packed and smooth on top.
  4. Refrigerate the bars for at least 30 minutes to firm up.
  5. Once set, remove the mixture from the dish using the parchment overhang, and cut into neat squares or rectangles.
  6. Serve topped with fresh mixed berries and a sprinkle of toasted sesame seeds for that finishing touch.
