  • 2 ripe 2 ripe peaches (approximately 300g, pitted and diced)
  • 4 tbsp 4 tbsp chia seeds (60g)
  • 2 cups 2 cups orange juice (480ml, freshly squeezed for best flavor)
  • 1 tbsp 1 tbsp honey or maple syrup (optional, 15g)
  • Fresh mint leaves for garnish optional
  • Other fruits like berries or banana for variety optional

Method
 

  1. In a mixing bowl, combine the orange segments and diced peaches.
  2. Add the chia seeds to the fruit mixture and gently toss to combine.
  3. Pour in the orange juice and stir well to evenly coat the fruits.
  4. If desired, drizzle honey or maple syrup over the mixture and give it another light stir.
  5. Refrigerate for at least 10 minutes to chill and allow the chia seeds to expand.
  6. Serve in individual bowls, garnished with fresh mint leaves. Enjoy immediately!
