- Begin by cutting the pears into small, bite-sized pieces. Place them in a mixing bowl.
- Carefully slice the pomegranate in half and use a spoon to tap out the seeds into the same mixing bowl with the pears.
- Add the chia seeds to the bowl, followed by honey or maple syrup (if using) and fresh lemon juice.
- Pour the coconut water over the fruit and gently mix everything to combine.
- Cover the bowl with plastic wrap and chill in the refrigerator for at least 10 minutes to allow the chia seeds to absorb some moisture and swell slightly.
- Before serving, give the fruit bowl a gentle stir. Serve chilled, garnished with fresh mint leaves if desired.
