Ingredients

  • 2 medium ripe pears, diced
  • 1 large pomegranate, seeds extracted
  • 3 tablespoons chia seeds
  • 1 tablespoon honey or maple syrup (optional)
  • 1 tablespoon fresh lemon juice
  • 1 cup coconut water
  • Fresh mint leaves for garnish optional

Equipment

  • Large mixing bowl
  • Paring knife
  • Spoon for scooping pomegranate seeds
  • Measuring cups and spoons

Method

  1. Begin by cutting the pears into small, bite-sized pieces. Place them in a mixing bowl.
  2. Carefully slice the pomegranate in half and use a spoon to tap out the seeds into the same mixing bowl with the pears.
  3. Add the chia seeds to the bowl, followed by honey or maple syrup (if using) and fresh lemon juice.
  4. Pour the coconut water over the fruit and gently mix everything to combine.
  5. Cover the bowl with plastic wrap and chill in the refrigerator for at least 10 minutes to allow the chia seeds to absorb some moisture and swell slightly.
  6. Before serving, give the fruit bowl a gentle stir. Serve chilled, garnished with fresh mint leaves if desired.

Take your Pear and Pomegranate Fruit Bowl to the next level by adding a handful of nuts such as walnuts or almonds for extra crunch!
You can easily swap the pears for apples or bananas based on your preference or what's in season.
This bowl can be stored in the fridge for up to 2 days; however, it's best enjoyed fresh to maintain the texture.
