  • about 400 g 2 ripe pears, diced
  • about 150 g 1 cup pomegranate seeds
  • 50 g 50 g coconut flakes
  • 1 tbsp 1 tbsp honey or maple syrup
  • 1 tbsp 1 tbsp lemon juice
  • Fresh mint leaves for garnish optional
  • A sprinkle of chia seeds optional

Method
 

  1. Start by gathering all your ingredients and equipment. Wash the pears and pomegranate thoroughly.
  2. Dice the pears into bite-sized pieces and place them in a mixing bowl.
  3. Cut the pomegranate in half and carefully extract the seeds, adding them to the bowl with the pears. (Option to wear an apron; pomegranate juice can stain!)
  4. Drizzle the lemon juice over the fruit mixture to prevent the pears from browning and to add a zesty flavor.
  5. If using, drizzle honey or maple syrup over the fruit and gently toss everything together until well combined.
  6. Transfer the fruit salad to a serving bowl and sprinkle the toasted coconut flakes on top.
  7. For an extra pop of freshness, garnish with fresh mint leaves. Serve chilled.
