  • 150 g carrots, grated
  • 40 g coconut flakes
  • 100 g Greek yogurt
  • 1 tbsp honey
  • 30 g mixed nuts, chopped optional
  • Fresh mint leaves optional

Method
 

  1. Start by washing the plums thoroughly. Slice them open, remove the pits, and dice them into small cubes.
  2. Peel the carrots and grate them using a grater until you have 150 g.
  3. In a mixing bowl, combine the diced plums and grated carrots. Toss them gently to mix.
  4. If desired, add honey to the mixture for a touch of sweetness, and mix well.
  5. Divide the fruit mixture into serving bowls.
  6. Top each bowl with coconut flakes and, if using, a dollop of Greek yogurt.
  7. For a finishing touch, sprinkle chopped nuts on top and garnish with fresh mint leaves.
