Ingredients
  

  • 200 g all-purpose flour
  • 150 g unsalted butter, melted
  • 150 g brown sugar
  • 100 g granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 150 g mixed berries (e.g., raspberries, blueberries, chopped strawberries)
  • 50 g chopped walnuts or pecans optional
  • Whipped cream for serving optional

Method
 

  1. Preheat the oven to 180°C (350°F). Lightly grease a 9x13 inch baking pan and line it with parchment paper.
  2. In a mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In another bowl, combine flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just mixed. Be careful not to overmix.
  5. Gently fold in the mixed berries and optional nuts, ensuring they're evenly distributed throughout the batter.
  6. Pour the batter into the prepared baking pan, smoothing the top with a spatula.
  7. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  8. While the blondies are baking, prepare the apple compote by peeling and dicing 2 medium apples. In a saucepan over medium heat, combine the apples with 50 g of sugar, the juice of half a lemon, and a sprinkle of cinnamon. Cook for 10-15 minutes until the apples are tender and the mixture is syrupy.
  9. When the blondies are done, remove them from the oven and let them cool in the pan for about 15 minutes before cutting them into neat squares. Serve warm with a generous spoonful of apple compote on top. Enjoy!
