Rich Berry Blondie with Apple Compote

- Preheat the oven to 180°C (350°F). Lightly grease a 9x13 inch baking pan and line it with parchment paper.
- In a mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.
- Add the eggs and vanilla extract, mixing until well combined.
- In another bowl, combine flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just mixed. Be careful not to overmix.
- Gently fold in the mixed berries and optional nuts, ensuring they're evenly distributed throughout the batter.
- Pour the batter into the prepared baking pan, smoothing the top with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- While the blondies are baking, prepare the apple compote by peeling and dicing 2 medium apples. In a saucepan over medium heat, combine the apples with 50 g of sugar, the juice of half a lemon, and a sprinkle of cinnamon. Cook for 10-15 minutes until the apples are tender and the mixture is syrupy.
- When the blondies are done, remove them from the oven and let them cool in the pan for about 15 minutes before cutting them into neat squares. Serve warm with a generous spoonful of apple compote on top. Enjoy!

The blondies can be stored in an airtight container at room temperature for up to three days, or refrigerated for up to a week.
