Ingredients

  • 250 g all-purpose flour
  • 90 g unsalted butter, softened
  • 50 g granulated sugar
  • 1 large egg
  • 100 ml whole milk
  • Zest of 1 medium orange
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp salt
  • Oil for frying
  • Powdered sugar for dusting optional
  • Fresh mint leaves for garnish optional

Equipment

  • Large mixing bowl
  • Food processor or plastic bag & rolling pin (for biscuits)
  • Frying pan (optional, for searing lamb)
  • Slotted spoon
  • Cooling rack

Method

  1. In a mixing bowl, combine the flour, baking powder, and salt. Stir to combine well.
  2. In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg, followed by the milk, orange zest, and vanilla extract, mixing until combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until a soft dough forms.
  5. Cover the dough with plastic wrap and let it rest in the refrigerator for about 10 minutes.
  6. Heat oil in a frying pan over medium heat until it reaches around 180°C (350°F).
  7. Roll out the dough to about 0.5 cm thick on a floured surface. Cut into neat squares or circles.
  8. Carefully drop the pastry pieces into the hot oil, frying in batches for about 2-3 minutes on each side or until golden brown.
  9. Use a slotted spoon to transfer the fried pastries onto a cooling rack to drain excess oil.
  10. Serve warm with the apple compote (see method below) on the side.

Notes

Feel free to switch up the orange flavor by using lemon or even lime for a different zest.
If you're looking to make these pastries a bit lighter, consider baking them instead of frying—just remember to brush them with melted butter before baking!
The apple compote can be prepared ahead of time and stored in the refrigerator for up to a week, making this dessert not only delicious but also convenient.
Enjoy and let your creativity shine!
