- In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg, followed by the milk, orange zest, and vanilla extract, mixing until combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until a soft dough forms.
- Cover the dough with plastic wrap and let it rest in the refrigerator for about 10 minutes.
- Heat oil in a frying pan over medium heat until it reaches around 180°C (350°F).
- Roll out the dough to about 0.5 cm thick on a floured surface. Cut into neat squares or circles.
- Carefully drop the pastry pieces into the hot oil, frying in batches for about 2-3 minutes on each side or until golden brown.
- Use a slotted spoon to transfer the fried pastries onto a cooling rack to drain excess oil.
- Serve warm with the apple compote (see method below) on the side.
