Ingredients

  • 250 g all-purpose flour
  • 50 g powdered sugar
  • 1 tsp ground cardamom
  • 1/4 tsp salt
  • 50 g unsalted butter, melted
  • 1 large egg
  • 100 ml whole milk
  • 1/2 tsp vanilla extract
  • (for frying) Vegetable oil
  • 150 g mixed berries (strawberries, blueberries, raspberries) optional
  • (for dusting) Icing sugar optional

Equipment

  • Heatproof mixing bowl
  • Food processor or plastic bag & rolling pin (for biscuits)
  • Deep frying pan or pot
  • Slotted spoon
  • Paper towels for draining

Method

  1. In a mixing bowl, combine the flour, powdered sugar, ground cardamom, and salt. Mix well.
  2. Add the melted butter, egg, milk, and vanilla extract. Stir until a soft dough forms.
  3. Knead the dough lightly for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 10 minutes.
  4. Roll out the dough on a floured surface to about 1/4 inch thickness. Cut into desired shapes (squares or circles).
  5. In a frying pan, heat vegetable oil over medium heat. Ensure the oil is hot by dropping a small piece of dough; it should sizzle upon contact.
  6. Fry the pastries in batches, 2-3 at a time, for about 2-3 minutes per side until golden brown.
  7. Remove the pastries with a slotted spoon and drain on paper towels.
  8. Allow them to cool slightly, then serve topped with fresh mixed berries and a dusting of icing sugar.
