Ingredients
  

  • 150 g all-purpose flour
  • 100 g unsalted butter
  • 75 g granulated sugar
  • 1 large egg
  • 1 tsp cardamom powder
  • 1 tsp baking powder
  • 50 ml milk
  • 150 g mixed fresh fruits (such as berries, peaches, or apples)
  • 100 g fruit jam (apricot, raspberry, or your preference)
  • Whipped cream optional
  • Fresh mint leaves optional

Equipment

  • Heatproof mixing bowl
  • Tart pan (preferably with a removable bottom)
  • Electric mixer (or whisk)
  • Cooking spatula
  • Large pot or Dutch oven

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and mix until well combined.
  4. In another bowl, whisk together the all-purpose flour, baking powder, and cardamom powder. Gradually add this dry mix to the wet mixture, alternating with the milk, until a smooth batter forms.
  5. Gently fold in the mixed fresh fruits to your batter, being careful not to break them.
  6. Pour the mixture into the greased tart pan and spread evenly.
  7. Bake in the preheated oven for around 30–35 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  8. Remove from the oven and allow to cool in the pan for about 15 minutes before transferring to a wire rack.
  9. Once cool, spread the fruit jam evenly over the top of the tart, then cut into neat slices for serving.
  10. Optional: Serve with whipped cream and garnish with fresh mint leaves.
