Ingredients

  • 200 g boneless, skinless chicken breast
  • 150 g white rice
  • 600 ml low-sodium chicken broth
  • 50 g medium carrot, finely diced
  • 1 tbsp olive oil
  • 1 pinch salt
  • parsley, finely chopped optional

Equipment

  • Medium pot
  • Chef's knife
  • Cutting board
  • Heatproof mixing bowl
  • Fork or potato masher

Method

  1. Begin by chopping the chicken breast into small, bite-sized pieces for faster cooking.
  2. In a medium pot, heat the olive oil over low to medium heat. Add the chicken pieces and sauté for about 5 minutes until they are lightly browned and cooked through.
  3. Add the finely diced carrot to the pot and cook for an additional 3-4 minutes until softened.
  4. Stir in the rice and pour in the low-sodium chicken broth. Bring the mixture to a gentle boil, then reduce the heat to low, cover, and simmer for 20 minutes.
  5. After 20 minutes, check the rice and chicken. Both should be very soft. If the rice is not fully cooked, continue to simmer for an additional 5 minutes, adding a bit more broth if necessary.
  6. Once everything is tender, remove from the heat and let it sit for about 5 minutes. Mash with a fork or potato masher to achieve the desired texture for your baby.
  7. Serve in small portions, letting it cool slightly before offering it to your little one.

Notes

As you explore this recipe, feel free to swap the chicken for turkey or even tofu for a vegetarian option when your little one is ready.
If your baby is sensitive to flavors, you can skip the pinch of salt, as the chicken broth adds enough flavor on its own.
Store any leftovers in an airtight container in the fridge for up to three days, and reheat gently before feeding.
Remember, as your baby grows, you can start offering this dish with more textures, like a few soft, whole peas or bits of sautéed vegetables! Happy cooking!
