- Begin by chopping the chicken breast into small, bite-sized pieces for faster cooking.
- In a medium pot, heat the olive oil over low to medium heat. Add the chicken pieces and sauté for about 5 minutes until they are lightly browned and cooked through.
- Add the finely diced carrot to the pot and cook for an additional 3-4 minutes until softened.
- Stir in the rice and pour in the low-sodium chicken broth. Bring the mixture to a gentle boil, then reduce the heat to low, cover, and simmer for 20 minutes.
- After 20 minutes, check the rice and chicken. Both should be very soft. If the rice is not fully cooked, continue to simmer for an additional 5 minutes, adding a bit more broth if necessary.
- Once everything is tender, remove from the heat and let it sit for about 5 minutes. Mash with a fork or potato masher to achieve the desired texture for your baby.
- Serve in small portions, letting it cool slightly before offering it to your little one.
