- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and carrot, sautéing until the onion is translucent, about 4-5 minutes.
- Stir in the rinsed lentils and rice, followed by the vegetable broth (or water).
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 25 minutes, or until the lentils and rice are soft and cooked through.
- If using, stir in the mild curry powder during the last five minutes of cooking for an extra hint of flavor.
- Once cooked, remove the pot from heat and let it rest for about 5 minutes.
- Check consistency – if needed, you can use a food processor to blend the mixture for a smoother texture. Serve in small portions for your little one. Enjoy!
