Ingredients
  

  • 100 g brown lentils, rinsed
  • 150 g jasmine rice, rinsed
  • 600 ml low-sodium vegetable broth or water
  • 1 medium carrot, finely chopped (about 50 g)
  • 1 small onion, finely chopped (about 30 g)
  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon (optional) mild curry powder
  • 50 g cooked peas or green beans (for added nutrition) optional

Method
 

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and carrot, sautéing until the onion is translucent, about 4-5 minutes.
  2. Stir in the rinsed lentils and rice, followed by the vegetable broth (or water).
  3. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 25 minutes, or until the lentils and rice are soft and cooked through.
  4. If using, stir in the mild curry powder during the last five minutes of cooking for an extra hint of flavor.
  5. Once cooked, remove the pot from heat and let it rest for about 5 minutes.
  6. Check consistency – if needed, you can use a food processor to blend the mixture for a smoother texture. Serve in small portions for your little one. Enjoy!
