- In a saucepan over medium heat, combine the sugar, light corn syrup, and salt. Stir until the sugar dissolves and the mixture starts to boil.
- Reduce the heat and allow the mixture to simmer without stirring for about 4-5 minutes, until it reaches a light amber color.
- Remove from heat and quickly stir in the butter, lemon zest, ground cinnamon, ground ginger, and sesame seeds until well combined.
- Pour the mixture onto the prepared baking tray and spread it out evenly with a spatula. Be careful, as the mixture will be very hot.
- Let the brittle sit at room temperature for about 30 minutes to harden.
- Once set, use a sharp knife to break the brittle into neat pieces.
- For the yogurt cream, mix the Greek yogurt with honey in a bowl until smooth and well-combined.
- Serve the brittle pieces drizzled with yogurt cream and garnish with fresh mint leaves.
